Byrd’s Toffee… sweet bites that spark joy!
Growing up, one small tradition always signaled the start of Christmas: my Polish grandmother’s homemade toffee. We called her Baba. Her toffee was sweet, simple, and filled with magic; each bite felt like permission to dream.
Years later, I began making Baba's recipe for family and friends: a gluten-free blend of butter, sugar, almonds, chocolate, and walnuts, creating a smooth, rich candy with just the right touch of crunch.
My wish for you is that when you have a piece of Byrd’s Bites small-batch toffee, it sparks a little joy and a little wonder in you, too.

My Story
From humble beginnings…
Farmer’s Markets in 2012
I started selling toffee in 2012, at a small farmer’s market in the Del Ray neighborhood of Alexandria, Virginia. My journey continued, with time in California, and now my recent move back to my home area in New England. Throughout the years and miles, my Grandmother’s toffee has been a big part of my journey— a journey of discovering connection, healing, and growth.
Toffee-making is a time-honored tradition and part of my family's heritage. Whenever I make a batch, I remember the afternoon when Baba first taught me about toffee as a small child in her kitchen in Chicago. She guided me to keep stirring and helped me learn to be careful, so I wouldn't burn myself. The process cannot be rushed. It takes about 30 minutes to create each small batch of goodness. I use real ingredients. There is no corn syrup. And it is gluten-free.
Combining the ingredients in a heavy iron pan is meditative for me. When I’m stirring the mixture with my wooden spoon, I offer gratitude for the elements coming together so well.
And it can be finicky. Sometimes the butter and sugar don't emulsify perfectly, so when they do, and the mixture turns into a beautiful golden brown with a texture a bit like molasses and a smell like heaven, I celebrate a bit inside! I get the same sense of joy as when I experience a sunrise. And then, when I pour the liquid gold effortlessly into a jelly roll pan, let it cool, melt chocolate on top, and finish it with a dusting of walnuts, I know I have prepared the perfect gift and that my Baba is smiling with me. I let it cool overnight, so I can break it into bite-sized pieces, perfect for enjoying and indulging!
Making toffee is a calling for me, and every piece is infused with joy, hope, and delight.

Your Questions, Answered
Can you accommodate dietary restrictions such as vegan or gluten-free?
The product is gluten-free; there are nuts in the recipe, so I cannot accommodate any nut allergies. I don’t offer vegan options yet, but it is something I am looking into. Let me know your parameters during the consultation, and I will craft solutions that meet both taste and safety standards.
What is the typical turnaround time for a custom order?
Project timelines vary based on complexity and volume. Most custom orders will require 4–6 weeks from initial concept approval to delivery, while simpler re-brands can ship in as little as two weeks.
Do you provide invoicing for large or recurring orders?
Yes. For corporate or high-volume clients, I issue detailed invoices outlining quantities, shipping, and any customization fees. Payment terms are discussed and agreed upon at the proposal stage.
